Job Summary: Works with various cleaning chemicals and solvents and insure others are using them safely. Insure all stewards are aware of the MSDS book and its location. Directs all stewards to locations needed for appropriate staffing levels in any given area on any shift. Work hands on with all stewards and areas needed daily. Pre-soaks and pre-washes dishware and silverware. Operates dishwashing machine according to manufacturer instructions. Places and removes tableware from dishwashing machine conveyer belt. Checks all tableware, kitchen pots, pans and utensils for cleanliness and rewashes unsatisfactory cleaned items. Keeps transport vehicles, carts, speed racks, warmers and queen maries clean. Stacks tableware according to size and likeness for future use. Polishes and cleans chafers, plate covers, warmers and other items as needed. Reports and logs all tableware breakages and damages and notify supervisors. Insure that grills, broilers and stoves are cleaned daily, weekly or nightly as required. Scrapes each equipment item with wire brush as needed and applies cleaning solution to clean and reassembles each unit when all pieces have been properly cleaned and rinsed. Cleans ventilation units and floor mats when needed. Clean, stock pots, tilt skillets and steamers as needed or when requested to do so. Cleans fryers and changes grease daily or as needed to insure grease is being disposed of properly and safely. Transports food to outlets when needed. Performs janitorial duties for all kitchens: sweeps and mops floors, scrubs walls, picks up and takes out trach and insure trash bags are discarded once bag is half-full of waste for safety. Requisitions all chemicals needed for any outlet daily. Schedules all stewards’ weekly, places schedules in KRONOS and approves time daily. Interview and hire any open position that may be available in a timely manner. Performs other duties as assigned. Keep back dock trash area clean at all times. Adheres to all regulatory, departmental and casino policies and procedures.
Job Qualifications: High School Diploma or General Education Degree (GED) or four years of job-related experience and/or training; Able to read and write to the High School level; Ability to comprehend Material Safety Data Sheets; One year job-related experience and/or training; Must demonstrate leadership skills; Proven record of dependability; Equivalent combinations of education and experience may be substituted.
