Job Summary: Responsible for the overall kitchen operation and insures all kitchen policies and procedures are followed. Create or modify existing menus to meet quality standards. Oversee daily operations of all kitchen staff and activities. Coordinate, Facilitate and purchase equipment and repairs. Recruit and manage kitchen staff. Create nutrition and safety standards and sanitation regulations for all kitchen outlets on property.
Job Qualifications: Bachelor’s degree (B.A) from four- year college or university. Fifteen years related experience and/or training. Equivalent combination of education and experience may be substituted. Managing 200+ team members in operational setting. High volume (12-15M) food revenue experience in hotel, casino, and resort. Multi- unit operations experience. Versed in regional and international cuisines. Computer literate=spreadsheet, word processing, database entry; Kronos, MyMicros, FoodTrak (or similar). Mescalero Apache Tribal preference/ Indian preference applies; multi-cultural experience preferred.
